Lets just say the markets are flooded with strawberries and I was craving cheesecake. But I'm not really into the whole elaborate baking scene so instead of an over the top loaded strawberry cheesecake I decided that these no bake strawberry cheesecake jars are probably more my thing.
And boy, are these good! If you are into easy desserts that not only taste incredible but also look good, these single serving strawberry cheesecake jars will not disappoint!

Ingredients for Strawberry Cheesecake Jars
This is such a simple dessert, that you'll most like find all of the 6 ingredients needed already at home.
Strawberries: I have used fresh strawberries, washed and stem removed for this recipe.
Biscuits: Usually cheesecakes use graham crackers as the base, but since that's not easily available in India, I have replaced it with Digestive Biscuits. You can even use the most basic variety of Marie biscuit if that's more easily available to you.
Cream cheese and heavy cream: We use both cream cheese and heavy cream to make the strawberry mixture. Both of these are necessary to achieve a smooth and creamy cheesecake mixture.
Butter: Melted, to be added to the crushed biscuits to form the base of these cheesecake jars.
Castor sugar: If you don't have castor sugar simply grind regular sugar until it turns into a smooth, fine powder.
My Secret To That Intense Strawberry Flavor
Now my problem with most strawberry cheesecake recipes is that the flavour of strawberries isn't up front. It can be insipid sometimes. So to solve that problem, I like to cook strawberry puree down till it reduces to half. This helps concentrate the flavour and packs every single bite with a sweet, tart strawberry flavour.
No Gelatin Needed
Traditional cheesecakes use gelatin to set the layer of cream cheese. This is prevents it from falling apart when it's set. But since we are making this no bake strawberry cheesecake in a jar, we can just use a spoon to scoop it out. There's no need for the dessert to set, hence we can make this entire dessert without gelatin.
How to make Strawberry Cheesecake
- Hull the strawberries and blend them to a puree in a food processor
- Add the strawberry puree and castor sugar to a saucepan and simmer.
- Cook till the puree reduces by half and becomes thick. This helps concentrate the strawberry flavour in the cheesecake. Set this puree aside to cool completely before using. You can even make this ahead and refrigerate it
- Transfer the digestive biscuits to a ziplock bag and whack it with a rolling pin till you have a fine crumb
5. Mix the biscuit crumb with melted butter and set aside
6. In a large bowl beat together cream cheese and caster sugar till soft and fluffy. Add the heavy whipping cream and beat for two to three minutes till the mixture increases slightly in volume. The mixture should resemble thick frosting.
7. Pour in the pureed strawberries and use a spatula to fold the puree in. Don't worry if the mixture is streaky and slightly runny.
8. Transfer to a piping bag for easy assembly.
9. To assemble these no bake strawberry cheesecakes, add two tablespoons of the biscuit crumb to a glass or jar
10. Pipe the cheesecake mixture till ยพth of the way. Repeat with other jars till you've used up all the mixture. Refrigerate overnight. Top with fresh strawberries and biscuit crumb before serving. These no bake strawberry cheesecake jars are best consumed straight from the fridge.
Top Tips To Make The Best Cheesecake Jars
- When crushing the biscuits, avoid grinding them to a smooth powder. It should be nice and coarse for that beautiful texture.
- It's important to be gentle when folding the strawberry mixture into the cream mixture to avoid air bubbles and achieve the perfect texture.
You can absolutely swap the biscuits or crackers for strawberry shortcake, vanilla cake or your favourite base to make these mini no bake strawberry cheesecake jars your own! - 300 grams Strawberries
- ยผ cup (50 g) Caster Sugar + 2 tablespoons extra
- 8-10 Digestive Biscuits graham crackers, digestive biscuits or marie biscuits
- 1 tablespoon melted Butter
- 250 grams Cream Cheese room temperature
- ยผ cup (60 g) Heavy Whipping Cream chilled
- Fresh Strawberry slices for topping
Instructions
- Hull the strawberries (take off the stem) and add them to a food processor and puree till smooth
- Pour the strawberry puree into a saucepan along with two tablespoons castor sugar and simmer this for about 10-12 minutes till the puree reduces in half and becomes really thick. Set this aside to cool completely.
- Transfer biscuits to food processor and pulse a few times till they resemble crumbs. Alternatively you can also transfer the biscuits to a ziplock bag and whack it with a rolling pin till you have crumbs. Mix the biscuit crumb with melted butter and set aside.
- In a large bowl beat together cream cheese and ยผ cup caster sugar till soft and fluffy. Add the heavy whipping cream and beat for two to three minutes till the mixture increases slightly in volume. The mixture should resemble thick frosting. Pour in the cooled strawberry puree and use a spatula to lightly combine everything. Don't worry if the mixture is streaky and slightly runny. Transfer to a piping bag for easy assembly.
- To assemble these no bake strawberry cheesecakes, add two tablespoons of the biscuit crumb to a glass or jar and pipe the cheesecake mixture till ยพth of the way. Repeat with all the other jars till you've used up all the mixture. Refrigerate overnight. Top with fresh strawberries and biscuit crumb before serving. These no bake strawberry cheesecake jars are best consumed straight from the fridge.

I made this one and 2 other versions of this where i swapped put the strawberry for frozen banana and frozen mango pieces. With the frozen fruit you need a little more. itโs very thick if you only have 300g. Tastes delicious and looks good. i wish i could post a photo!

Hey Janette, you can make this a day in advance. I think two days should be okay too though I've never tried making it two days in advance myself, but as long as the jars as refrigerated they should be okay.

This is a very light cheesecake. Strawberry is the main flavour. Very different to a usual cheesecake in texture and taste due to the high level of strawberries. Not sure I will bother with the biscuit crumbs next time. Will make again.
