Mix together all the ingredients for the marinade with the prepped chicken

Shallow fry the marinated chicken until golden brown

Soak dry red chillies in hot water for 30 minutes or until soft

Blend the chillies to a coarse paste.

Combine all the sauce ingredients and mix well

Sauté garlic, ginger, celery and dry red chilli on a high flame

Add bell pepper and mushroom and continue to sauté

Add fried chicken pieces and stir to mix

Add the sauce mix and sauté on low flame till the sauce thickens. Check seasoning and adjust

Serve alongside stir fried rice or noodles
