Cut mangoes into ½ – ¾ inch cubes

Make a mango puree.

Whisk together sugar, oil, coconut milk and vinegar

Add mango pulp and whisk again till combined.

Sift flour, cornstarch, baking powder, baking soda and salt into the bowl.

Whisk again till mixed. Don't overmix.

Pour the batter into the prepared tin and bake .

Let it cool & top it with whipped cream

You can also add fresh mangoes and toasted coconut. And its ready!
