Air Fryer Fried Chicken

This Air Fried Chicken is just like the real deal – crispy and juicy – but made with ease and healthier in the Air Fryer. Enjoy it as a burger, salad or the clasic mashed potatoes and gravy.

Ingredients

Chicken marinade

  • 600 gms approx. 7 boneless chicken thighs
  • 1 tablespoon whisked curds
  • 2 tablespoons garlic paste
  • 30 finely chopped curry leaves
  • 2 tablespoons finely chopped coriander leaves
  • 1 ½ tablespoons schezwan sauce
  • 1 teaspoon kashmiri chilli powder
  • ½ teaspoon black pepper powder
  • 1 ½ teaspoons salt
  • Juice of 1 lemon approx. 3 teaspoons
  • 1 tablespoon cooking oil
  • 1 egg whisked

For outer coating

  • 1 cup cornflakes roughly crushed

For greasing

  • 2 tablespoons melted butter

Instructions

Marinating chicken:

  • Add all ingredients for chicken marination except chicken to a bowl & whisk to combine well. Add chicken & mix well. Set aside for 1 ½ - 2 hours for the chicken to get marinated well.

Prepping cornflakes:

  • Add cornflakes to a zip lock bag, seal and place it on a flat surface. Roll the rolling pin over the cornflakes to crush them to bits. Take care not to crush it too finely. Set aside on a plate.

Making fried chicken

  • Pre - heat air fryer to 190 C & brush the basket lightly with butter.
    2 tablespoons melted butter
  • Roll each piece of marinated chicken on the crushed cornflakes and make sure that the pieces are coated well.
  • Brush the air fryer basket with butter and place the coated chicken pieces with some gap between each other. Drizzle or spray melted butter on each piece.
  • Air fry chicken at 190 C for 5 minutes, flip them once, drizzle or spray butter and air fry at 190 C for 4 minutes. Air fry at 200 C for 3-4 minutes flipping once, till the chicken is fried to a golden brown.

Notes

  1. 3 suggestions for serving fried chicken: can be used as a patty in a burger, as a meal with mash & gravy or slice and serve with a salad.
  2. This recipe works best for boneless chicken thighs as they are tender & juicy which may be replaced with chicken breasts.
  3. Any cooking oil may be used in marination as per your choice, I have used groundnut oil.
  4. Do not skip marination time for chicken as it makes sure that it tenderises well.
