Japan Chicken

Ingredients

Marination

  • 250 gms boneless chicken thigh cut into 2 inch cubes
  • 1 teaspoon ginger garlic paste
  • ½ teaspoon pepper powder
  • ½ egg white
  • ¼ teaspoon salt
  • 1 tablespoon maida
  • 1 tablespoon cornflour

Other

  • ½ tablespoon cooking oil +2 tablespoons for shallow frying chicken
  • 2 teaspoon butter
  • 1 ⅓ tablespoons finely chopped garlic
  • 3 green chillies sliced diagonally
  • 1 ½ cups milk
  • 3 tablespoons cashew powder
  • A pinch sugar
  • ½ teaspoon salt
  • ½ teaspoon white pepper powder
  • 1 tablespoon finely chopped coriander leaves

Instructions

Marination

  • Take all the ingredients for marination in a bowl, toss to combine well and set aside for 20 minutes.

To shallow fry

  • Heat 2 ½ tablespoons of oil in a shallow pan, add marinated chicken and fry on medium for 3-4 minutes till they are fried well and turn golden. Do not overcrowd the pan so the chicken gets fried evenly. Fry the chicken in batches and set aside.
    ½ tablespoon cooking oil

To Air fry

  • Pre-heat air fryer to 200C and brush the basket with oil. Add marinated chicken with some gap between each and spray some oil. Air fry for 6 minutes, flip, spray some oil and air fry the other side for 2-3 minutes till they are fried well. Repeat the same for the rest of the chicken

Making Japan chicken

  • Retain ½ tablespoon of oil in the pan and remove the rest of the oil. Add butter and once it melts, add garlic and saute on high for a few seconds till fragrant. Add green chillies and saute for a few seconds.

  • Add milk, cashew powder and mix immediately so the cashew does not get lumpy. Once it starts boiling, set on low, season with salt, white pepper powder, sugar, mix well and cook for 3-4 minutes till the sauce thickens a bit.

  • Add fried chicken & cook on low for 2-3 minutes till the sauce coats the chicken. Garnish with coriander leaves and serve.
