2 tbsp cream cheese, 2 tbsp greek yoghurt, 1 tsp honey, 4 drops drops vanilla extract
Assembling Watermelon Pizza
Cut watermelon in half. Cut two 1-inch thick rounds from the widest part of the watermelon.
2 watermelon discs
Place watermelon rounds on a plate. Cut each round of watermelon into 6 wedges.
Spread two tablespoons of cream cheese glaze on each slice being careful not to have it run off the edge. Arrange the cut fruits on top. Choose your favourite fruits, go wild!
2 kiwis peeled and diced, 2 oranges peeled & cut into segments, 30 blueberries
Drizzle a little honey on top of the fruits (optional). Watermelon pizza is ready to serve.
1 teaspoon honey
- Choose a round watermelon to get bigger discs for the pizza. Seedless watermelon works best for this recipe, you may also use them with seeds, just like I did.
- An assortment of fruits or berries can be used as toppings for the pizz. Refrain from using fruits that tend to brown like bananas or apples.
- Greek yoghurt can be replaced by sour cream.
- Using honey adds a nice glaze and flavour to the pizza.
- The cream cheese glaze in this recipe is good to make 2 watermelon pizzas.
- Refrigerate pizza slices if you have any leftovers. This stays good for a few hours, after which the watermelon starts to absorb the sauce.
- Cream cheese glaze stays fresh in an airtight container if refrigerated for up to a week.
