Ingredients

  • ½ Cup Frozen Corn Ground
  • ½ Cup Frozen Corn Defrosted
  • ½ To ¾ Teaspoon Salt
  • 2 tablespoon Chopped Spring Onions
  • ¼ Cup Chopped Green Capsicum
  • ½ teaspoon Italian Seasoning
  • ¼ Teaspoon Ground Black Pepper
  • ½ Cup Grated Cheese Cheddar Or Any Melting Cheese Of Your Choice
  • ¼ Cup All-Purpose Flour Maida
  • ¼ Cup Whole Wheat Flour Atta
  • 1 Egg
  • Cup Milk
  • ¼ teaspoon Baking Powder

Instructions

  • Preheat your waffle maker according to its instructions.
  • In a mixing bowl, combine the ground frozen corn, defrosted frozen corn, chopped spring onions, chopped green capsicum, Italian seasoning, ground black pepper, grated cheese, all-purpose flour, whole wheat flour, and baking powder. Mix everything together.
  • Add the egg and milk to the corn and cheese mixture, and mix until well combined.
  • Grease the waffle maker with cooking spray or butter, if needed, to prevent sticking.
  • Pour a ladleful of the prepared batter onto the hot waffle maker, spreading it evenly to cover the surface. Close the waffle maker and cook the waffle for about 6-7 minutes or until it turns golden brown and crispy.
  • Carefully remove the cooked Cheese Corn Waffle from the waffle maker and place it on a serving plate. Repeat the process with the remaining batter to make more waffles.
  • Serve the Cheese Corn Waffles hot, either on their own or with your favourite toppings such as sour cream, salsa, or a drizzle of mint chutney.

Notes

  • Don’t worry if you don’t have a waffle maker. You can easily pour this batter over a hot pan and turn it into a pancake.
  • You can customise the veggies - some other veggies to try include cabbage, onions, grated carrots, spinach, grated  zucchinis and bell peppers to make this dish even more nutrient dense.
  • If you are adding grated veggies like zucchinis and bell peppers, make sure to squeeze out the excess water to prevent the batter from becoming too runny.
