My kids ask for pancakes at least once a week. So it’s no surprise that I have a ton of pancake recipes on the blog. I am not complaining though because pancakes have to be one of the easiest things to make out there. And these mini banana pancake bites are no exception. 

Slices of banana are dipped in a pancake batter and then cooked on a hot skillet. The result is extremely soft and fluffy bite-sized pancakes with a surprise centre. Pancakes that look and are also delicious? I am in!! The kids are going to love this one!

  • You can use any pancake batter to make these mini banana pancake bites. I switch between this, my chocolate ragi pancake and spinach banana pancake batter to keep things fun and interesting.  
  • You could even use a ready pancake mix if you are pinched for time. 
  • When you grease the tawa with butter, make sure to wipe off the excess. This will allow the pancakes to brown more evenly. 
  • Slice the bananas to about 1/3rd of an inch to allow the batter to cook fully. If the slices are too thick then it’s likely the sides of the pancake bites could remain undercooked. 
  • Avoid using overripe browned bananas as they won’t hold their shape, which could result in mushy, broken pancakes.

Can I make these pancakes with other fruits? 

Yep, why not! You can use your favorite berries or pineapples to make these pancakes for a fun variation.  

Can I use wholewheat flour instead of all purpose flour?

I wouldn’t recommend that because wholewheat flour would change the texture and flavor of these pancakes quite a bit.

Can I make these mini banana pancake bites without egg?

Absolutely! Simply egg with flax egg (mix 1 tbsp of flaxseed powder with 3 tbsp of water), and there you have a vegetarian version of these pancakes.

Mini Banana Pancake Bites

Ingredients 

  • 2 bananas, sliced
  • 1 teaspoon butter, for cooking pancakes

For the pancake batter:

  • 1 ½ cup all purpose flour, maida
  • 1 tsp cinnamon powder
  • 1 ½ tablespoons sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • 1 egg
  • 2 teaspoons vanilla extract
  • ¼ cup melted butter or ghee
  • 1 ¼ cups milk

Instructions 

  • Start by adding all the ingredients mentioned under pancake batter in a bowl and mix together till combined. The batter will be thickish. Rest for 15-20 minutes or overnight.
    1 ½ cup all purpose flour, 1 tsp cinnamon powder, 1 ½ tablespoons sugar, 2 teaspoons baking powder, ¼ teaspoon salt, 1 egg, 2 teaspoons vanilla extract, ¼ cup melted butter or ghee, 1 ¼ cups milk
  • To make the pancakes, brush a hot skillet or tava with butter.

  • Dip a slice of banana into the pancake batter and coat well on both sides. Place it on the hot skillet. Cook for a minute or so and then flip to cook the other side. Place as many batter coated bananas as possible on the skillet without them touching each other. Repeat till all the pancakes are cooked.

  • Serve them dusted with sugar alongside honey, maple syrup or chocolate sauce.
