    Mug recipes are quick, easy and make for the best evening snack. We’re sharing two super simple mug recipes that are ready in minutes and taste incredibly delicious too! 

    If you know me, you’d know just how important evening snacks are for me. But as a working woman and mother, I don’t usually have more than a few minutes to whip up a snack. This is why recipes that require hardly any prep, and come together in minutes are definitely right up my alley!

    For these, and so many other reasons, I am absolutely in love with microwavable mug recipes! Made famous during the lockdown by the microwavable mug cakes, these recipes have since taken so many new and interesting turns. Which is one of the major reasons why I wanted to try a savoury version for myself, and I am so happy with these bread pizza mug and Mexican cheesy rice mug recipes! The bread pizza is like an instant pizza mug, and is perfect to satisfy unexpected pizza cravings. 

    Both these recipes are made with just a handful of ingredients, and come together in minutes and taste so delicious, that I really wish I had tried them earlier. Trust me, once you try making these, you will want to make them again and again! In case you need a little more convincing, here are some reasons why you should absolutely try these mug recipes: 

    • The perfect quick, easy and delicious snack for when the 5pm hunger strikes. 
    • It’s a combine-and-microwave recipe, which is ready in minutes!
    • Needs just a few ingredients that you can easily find both at most grocery stores 
    • Perfect way to use leftovers in the fridge 
    • A beginner and kid-friendly recipes 

    Ingredients You'll need for these Mug Recipes

    Here’s everything you need to make Instant Bread Pizza Mug and Mexican Cheesy Rice Mug:

    • Bread: Used in the bread pizza recipe.I have used white bread cut into tiny squares. But you can use bread of your choice for the bread pizza recipe. 
    • Cheese: Mozzarella cheese works best for these recipes as it melts really well and gives the best texture. 
    • Pizza sauce: I have used my homemade pizza sauce for this recipe, but you can easily use a store-bought one too. In case you don’t have either, you can even sub it with tomato paste. 
    • Veggies: For the bread pizza, I have used red, yellow and green bell peppers, and corn, but you can use any veggies of your choice. 
    • Rice: I have used leftover rice for this recipe. I wouldn’t recommend using freshly-made rice as that would affect the texture of the recipe. 
    • For the Mexican rice, I have used chopped green capsicum, golden corn and green olives. 
    • Oil: I have used olive oil for this recipe.
    • Seasoning: A store-bought Italian seasoning for flavour and aroma. 
    • Fresh cream: Used in the Mexican rice recipe, to achieve that authentic creamy texture. 
    • Mexican Seasoning: You can use store bought taco seasoning or burrito seasoning. 
    • Salt: Just a little bit for flavour and seasoning. 

    Richa’s top tips to make the best mug recipes

    • For the Mexican rice recipe, cold, leftover rice from the previous day works best. If you are making rice the same day, make sure to cool it completely and then refrigerate at least for a couple of hours before making this recipe for the best texture and results. 
    • Make sure to use a microwave safe mug for these recipes to avoid any untoward accidents. 
    • You can use slightly stale sandwich bread or fresh bread as well. It's an easy way to use up old bread in the house!

    Apart from being a breeze to put together, I love how cute mug recipes look when served. Additionally, since they can be eaten straight from the mug, that’s one less dish to clean, which I honestly think is awesome! I usually eat this with a hot cup of tea, because no evening snack is ever complete without tea. But both these recipes taste amazing just as they are too! 

    Mexican Cheesy Rice Mug

    Mexican Cheesy Rice Mug

    A quick and easy microwave mug recipe using leftover rice. I use store-bought Mexican seasoning and pizza sauce to cut down on the prep time!

    Ingredients

    • ¾ Cup Rice
    • 2 Tablespoon Pizza Sauce
    • 1 Tablespoon Cream
    • 1 Teaspoon Melted Butter
    • 1 Teaspoon Mexican Seasoning
    • ½ Teaspoon Chilli Flakes
    • ¼ Cup Diced Veggies I used chopped green capsicum, golden corn and green olives.
    • 2 Tablespoons Shredded Mozzarella Cheese
    • ½ Teaspoon Salt
    • ½ Teaspoon Olive Oil
    • Jalapeño Slices optional

    Instructions

    • Add melted butter, cream, one tablespoon of pizza sauce, mexican seasoning, chilli flakes, half of the diced veggies to a bowl and mix.
    • Add rice and salt to the bowl and mix to combine.
    • Layer the mixed rice, remaining veggies, pizza sauce and mozzarella cheese in a microwave safe mug. Top with jalapeno slices and mozzarella cheese.
    • Microwave for 90 seconds on high or until the cheese melts. Serve hot immediately.

    Ingredients

    • 1 Slice Bread cut into squares
    • 1 Teaspoon Melted Butter
    • 2 Tablespoon Pizza Sauce
    • 1 Teaspoon Pasta or Italian Seasoning
    • ½ Teaspoon Chilli Flakes
    • ¼ Cup Diced Vegetables I used chopped green capsicum, golden corn and green olives.
    • 2 Tablespoons Mozzarella Cheese Shredded
    • ½ Teaspoon Olive Oil optional

    Instructions

    • Add melted butter, one tablespoon of pizza sauce, pasta seasoning, chilli flakes, half of the diced veggies to a bowl and mix.
    • Add bread cubes to the bowl and mix to combine.
    • Layer the mixed bread, remaining veggies, pizza sauce and mozzarella cheese in a microwave safe mug. Top with jalapeno slices and mozzarella cheese. Drizzle a spoon of olive oil on top, if using.
    • Microwave for 90 seconds on high or until the cheese melts. Serve hot immediately.
