It's strawberry banana coconut smoothie time folks because it's Monday and we are in a rush. And even if some of you lucky folks don't have Monday morning issues, it's always a good time for a smoothie.
This is only the THIRD smoothie on the blog because though my love for smoothies only grows, I always drink it up before I have time to photograph. It's so fast and easy. And then my stomach aches if I don't reach for the glass immediately. And before I know it, it's gone.
So this time, I made a strong effort to calm my greediness and make sure I take some pretty pictures of this strawberry banana coconut smoothie because it's so good. It's completely sugar free because when you have fresh, sweet fruits and berries (thank you winter!) you can just kick the sweeteners out of your life.
This smoothie is almost like juice because it's dairy free, nut free, soy free, vegan, paleo and also Whole30 compliant if you are into that sort of a thing. I'm mostly not a big diet follower though I'm considering some of them, just to see how they feel. More like following a healthy lifestyle and concentrating on what I put in my mouth, than forcing myself to stop eating. Which makes sense right? So the fact that this smoothie checks all the right places is a very good thing. It feels more legit. And gives you an excuse to have that second and third glass if you fall in love with it.
When it comes to smoothies, I have spoken about how freezing your fruits can make things creamier and more exciting. But this one is perfect with fresh fruits. There is no thickener here like oatmeal, and the liquid comes from coconut water so we don't want it to become extra watery.
It's just a quick and easy three ingredient smoothie for all you on-the-go-breakfast peeps.
Just dump everything in a blender, blend it all up, pour it into a glass and throw in one of those cute straws for extra fun factor and sip away before you leave for work. And if you are anything like me, you'll make an extra glass for that evening snack.

Strawberry Banana Coconut Smoothie (Vegan, Paleo, Whole30)
Ingredients
- 3 cups Fresh Strawberries top removed
- 1 banana large
- ½ cup Coconut Water
Instructions
- Take off the top of the strawberries and peel the banana. Put everything in a blender along with a few ice cubes if your fruits are not cold, and blend till smooth. Taste and add a sweetener if you like, but I didn't feel the need. Pour into glasses and enjoy!
Notes
- Feel free to add chia seeds or your favourite nut to the smoothie while blending.
- You can also substitute coconut milk for coconut water if you want.
- Serve immediately as the liquids start to settle down and separate when left to sit.Â

Does the extra store well in the fridge?

Yes it does. You can store it for up to a day. You will just need to stir it with a spoon before drinking.
